If you were lucky enough to come to my Feel Good Food pop up supper club at North Star Deli in Chorlton and the City, you will have been lucky enough to try my “palate cleanser cocktail” a Rhubarb gin and Electric Daisy Spritzer.

Rhubarb and Electric Daisy Spritzer

After much interest on the evening I have decided to give you the recipe, you were all too excited about it!

To make the Rhubarb and Electric Daisy Syrup

1.5kg of Rhubarb
600 g caster sugar
juice of 1 lemon
aprox 1/2 cup of water (just enough to just cover the rhubard)
6 electric daisies (plus more to finnish the cocktail)
1 litre of gin

Put all of the contents into a saucepan, bring to the boil and simmer for about 15 minutes until all of the rhubarb has broken down.

Put the contents through a sieve until you are left with the rhubarb cordial.
(you can use the the over rhubarb flesh for jam, or whiz it up with a hand blender and stick in an ice cream maker if you have one and…voila, you have easy and delicious  rhubard sorbet without any food waste!)

Making the Cocktail

Once you have made the syrup you can put it in a large container with 1 litre of gin (you can use any but I just used bog standard Gordons gin)

Now this is the intesting part, the electric daisy. I used aproximatly 6 daisy head broken up and sprinkled in the gin/rhubard mix. Leave this to steep for a day or two in the fridge, letting all of the flavours infuse with each other.

Once the rhubarb and electric daisy gin in ready, it is time to make the cocktail

I would go with the ratio 1/3 gin to 2/3 mixer, I used cloudy lemonade, although you can use soda water with lemon, or tonic, which ever you prefer and it also depends on how sweet you want the finished cocktail to be.

Pur the gin over ice, top with your mixer and place a whole electric daisy bud on the top, this is the interesting party if you have never had an electric daisy, I sold it as a “palate cleanser” which teqnically it is, altough may people say it is like licking a 9V battery, might not sound the best, but trust me, once you have tried it once you will want to try it again and again…
