This week I made Scotch pancakes to layer between the masses of bacon, they are so easy to make and look so professional, you will be very proud!
I also made fried banana and poured a little bacon fat on them for Taste The Love indulgence!
Breakfast best served after 12!
For Pancakes
200g Self Raising Flour
25g caster sugar
1 egg
250 ml Milk
Pinch of salt
To make the pancakes, put all of the dry ingredients into a bowl and mix. Make a well in the centre and drop in the egg and milk. Whisk everything together thoroughly. The batter should be creamy, add a little more milk is necessary. Drop the batter in spoonfuls into a hot, dry, non-stick pan until bubbles rise to the surface. Flip the scones over with a palette knife and let the other side cook for 2 -3 minutes. When they are cooked lift them onto a clean tea towel on a cake cooking rack and cover with another clean tea towel. The moisture and heat will be retained and they will stay soft.
Layer up with bacon, fried banana and maple syrup
Eat.
